Sorry.. this is my first smartphone. I've downloaded some apps that i dont like. is there a way to delete them?

At the home screen, Menu > Settings > Applications > Manage applications

You cannot uninstall preloaded apps (yet - need root first). You can uninstall market apps by opening the market app, selecting menu, downloads, choosing the app you want to uninstall and then clicking uninstall. The method posted previously works as well.

Can you hide the preinstalled apps like on Blackberry?

I just pressed and held one of the core HTC apps (Voice Dialing), and I was given the option to remove it. I don't think that deletes the app, but I'd guess that the icon would be hidden.

I need the app; so, I didn't 'remove' it. Sorry.

interesting, maybe try that with some like visual voicemail and let us know if you can delete that

Not from the All Programs list. The only place you can remove them is if you add them to one of the 7 home screens. We are getting very close to root access, so this capability should be available soon.
