First what is your device?
For most Samsung:
Apps, Settings, General, Accounts, Google, Select Account then scroll down to bottom & there will be a Sync Now & Remove Account option, select Remove Account.
If there are no option buttons then try this method:
Go to Settings, General , Accounts, Backup, Account, Remove Account. If you see it isn't one Remove Account option there at which point it changes. You must actually hit your menu key (I call it the menu key some call it the option key, it's whichever key you use to bring up option list which is usually the key that resembles a paper with 2 lines on it) this will bring up Sync Now option & Remove Account option. Simply select Remove Account, a message will come up stating "Removing the account will delete messages, contacts, and all other data from the device. Continue?" you will then have a Cancel or Remove Account option, select Remove Account & your done.
If it is a LG, go to Settings,General, Accounts & sync, Google, Click the Account (i.e. gmail.com ) tap the 3 dots or menu key then the option box for Sync or Remove Account should appear. Choose Remove Account.
Typically one of these will work for Nexus & HTC. Also for tablets.
