How Do I Go About This?

I usually turn off all assistant/helper type features but I'd like to give the Pixel's advanced features a try. I don't want it always listening though. It's there a way that, instead of giving a "hey" command, I can hold down or double tap a button, THEN my pixel will start listening?

Example; I would like to be able to double tap power and then be able to tell my phone to set a reminder, or start recording a voice memo, without me having to look at the screen or go into menus.
Possible?
 
Open your Google app, then tap your profile pic at the upper right, then Settings. Now select Google Assistant, and scroll down to Voice Match. Turn the Hey Google toggle off.

Next, go to the phone's system settings, then System>Gestures>Press & Hold Power Button. Make sure that's set to Digital Assistant. Now you should be able to bring up Google Assistant by pressing and holding your Power button, but it shouldn't be constantly listening for you to say "Hey Google."
