I've installed a ED01 package via Odin, rooted and put up the latest CWR. How do i tell if the ED01 what was supposed to be stock is Vodoo or not?

If it's a stock package you used, chances are pretty good it's nonvoodoo, as all stock ROMS that I've seen are. If you want to go VooDoo, you need to flash a custom ROM.

More than likely your not, unless you flashed a voodoo kernel and manually enabled lagfix.

The stock ED01 ODIN packages don't include voodoo kernels, to my knowledge, but double check with Landshark on his thread for absolute.

You can also boot into Recovery, choose voodoo from main CWM menu, and you should see something in white writing at the middle/bottom of the screen that says the following if YOUR VOODOO:

Voodoo Lagfix is actually : enabled
next boot : enabled

Options:

/system lagfix conversion : yes
debug mode : no

get a free terminal emulator from the market .
open it and type mount

the fourth line down should say something like
/dev/block/stl10 /system ext4
that will mean you are running voodoo lag fix

if it says rfs you are not running voodoo

Or you can just download Quadrant Standard on the market and run the benchmark. If your getting scores of 1000 or below you are not running voodoo.
