I have found that I have to click to change this setting every time I get in my car. I do not want my text messages popping up on my radio screen, however I can not find a way to make this stop for good without having to uncheck the button each time I get in my car.

This looks like a real need. It is unfortunate the your phone's default doesn't provide you the ability to disable your car connecting to the message reading service in your phone. I remember HTC UI used to have to feature, where the Message Access Profile can be enable/disabled in advance.
I am working on the Message Access Profile and I will check the possibility of automatically answering the UI's request from an App. I will keep you posted.

Hello, any updates on this? Same situation. I have to turn it off every time my uconnect pairs up. Very annoying.

THanks,
Chad

Oh. Sorry for late response. I was busy getting married all this while. Let me check get back to the android world. How about a solution where an app gives you an ability to disconnect the messaging client connection from your car.
