How in the world do you disable application updates???

These are so annoying!!! Why does every single app need to update like every other day?? My guess is that most of them use your personal info for data mining. I just want to have it all shut off -- can't seem to find a way in "Settings".
 
You can turn off the automatic updating of applications via Market:

Open Market, press Menu, then My Apps.
Select each [Google] app individually and untick 'Allow automatic update'
Be sure to check that new apps you install don't have this "feature" enabled by default. ;)

You can also disable notifications of new updates if that is bugging you:

Market --> Menu --> Settings --> Untick Notifications.

You're welcome! And if you're still really worried about the device/app initiating when you don't want it to or don't know about it, you could isolate Market Updater using App Quarantine (root required), then only unlock it when you want to update or install new software. App Quarantine is a must-have if you prefer replacements for some of the stock apps (e.g. Messaging, Talk, Gallery). I admit that I haven't used it on this particular process, but maybe someone else has and could provide more insight... I'm just throwing the option out there.

Now with the revamped market app it's no longer possible to disable notification updates - they've taken away that option.

Do they seriously believe that we want notification updates for apps that we choose NOT to update? Bloody Idiots.
 
On my version of the Play Store (v4.3.11) you can turn on/off "Notifications" regarding updates by unchecking the "Notifications" box.
 
For my andoid Huawei phone, I goto playstore, click on the `app update request' and then once the playstore app page comes up, it gives you the option to update or uninstall the app, now click on settings but and there is a checkmark you can remove for the specific app to not receive auto updates.
