I feel that the people with fewer apps have/keep tighter control of whats in their phone. They are very selective people and tend to be clean/organized, borderline neat freeks!

People who have a lot of apps tend to be lazy and messy people in general, hence why they are so messy with their apps!.......lol!

LOL not sure anymore they're all gone now..... I believe many of the files held items such as your wifi passwords as I had to reenter it when when I got home today. All of the folders repopulated after a reboot. Like I said my wifi required the password to be entered and the phone forgot the bluetooth devices that were remembered and they had to be set up again. So I think it holds various settings.... Folders include...
audio
bluetooth
bluetoothd
dhcp
gpsone_d
keychain
keystore
location
radio
systemkeys
vpn
wifi

I cap mine at 200, and I do a purge if I am getting close. I probably only use 25 or so as my core apps, but sometimes it is nice to have just the right app at just the right time.
