You need to enabled the Developer Options.

Go to Settings > About Phone.

Scroll to the Build Number entry and tap on it. After a few taps, you should see a countdown. Keep tapping until the countdown is complete.

Once Developer Options is unlocked, go back to the Settings menu. Developer Options is now available (above About Phone).

To see which runtime you're currently using, look for Select runtime. It should be set to "Use Dalvik". Turn Developer Options on at the top. Then you can toggle your phone to use the ART runtime instead.

I dont think there is a choice to switch from ART back to Dalvik when on Lollipop.
