My Galaxy S7 with Android 8.0.0, Kernel 3.18.71, was paired to a Sony MX 1000-M5 Headset. I was on a call and the Headset stopped working. Continued the call on the phone with the Speaker on. Eventually the phone speaker stopped working too and I found that I had to hold the phone to my ear to continue the call. After the call I checked Bluetooth Settings and found that the phone thought it was paired to both my Headset and a Panasonic KX-TG76. The battery was at 84% Charge.

Why did my connection change during the call? How do I keep the phone connected to the headset and not automatically pair with additional devices? How come the phone's speaker turned off by itself? Why is this dumb phone changing settings during my phone call?

Thank you in advance for any help you may provide me to fix these issues.

The phone was rebooted last night after placing it on the charger because it had turned itself off. The phone call was this morning so the issue occurred soon after a reboot.

Safe Mode and Cache Partition Wipe are new to me. Is this something we need to know in order to use a phone as a phone? I don't make many long phone calls. So if I wipe the cache and boot in safe mode I won't know if that fixes anything until it never happens again. Very frustrating to own a device that just stops working well and not knowing exactly why.

I'll try wiping the cache first. Then if I have problems again in the next Month we will try using Safe Mode.

At least i'm not 80 years old. How are older people supposed to use their Android Phones?

Tried to wipe cache partition and it got me into a System Update screen instead of a menu to wipe the cache. If I have trouble again I'll bring it back to Verizon and let them deal with it.

Safe Mode temporarily disables all 3rd party apps that the user installed, which is a useful troubleshooting step to figure out of a problem is due to something the user installed, or if it's due to the system or the hardware. Computers have a Safe Mode as well, which I'd say isn't exactly common knowledge to laypeople, but is certainly well-known to more techy people.

Wiping the cache partition is also something that's not in the standard user manuals, but again is well known to techy people, and on good support sites like T-Mobile's, it's fairly easy to find out how to do it.

The System Update screen you got to might have been Download Mode (aka Odin Mode), which typically happens if you press Vol Down instead of Vol Up in that button press combination. Make sure you're following the steps exactly.

And stop discharging the battery to the point that the phone turns off. A decent battery should last for at least a few years, but if you keep discharging it that way, it won't last 6 months. (Replacing it is both expensive - and the batteries were made in 2016, so the replacement is already in pretty bad condition.)
