So in the short time I've handled the phone without a SIM, I notice that sRGB mode toggles off after powering off the phone and back up again. Is there a way to keep it on?

I was curious about the same thing and ran across this thread at XDA

sRGB don't stick after reboot | Huawei Nexus 6P

Not sure if it's ok to post that, so mods please remove if not.

The one thing I'm really confused about is when I do enable mine, which resets like yours on a power cycle, I can't tell any difference in the colors. Is it an immediate severe difference or should I setup some sort of picture or something to verify it's actually changing? The menu screen looks the exact same.

Been wondering the same thing. I've gone in and moved that sRGB slider ON after a battery cycle and ... haven't noticed any real change in the screen after it boots up til I recharge. Only change is when I go back in to the Dev folder to look and ... the sRGB slider has been turned OFF. So going to try one of the suggestions from XDA post. Funny .. the screen colors, minimal saturation, and blacks look just fantastic whatever I do.
