I have been trying to figure this out for a while with Marshmallow on the Galaxy Note 5 and I finally found the setting today (I would assume this will work for all Samsung phones running Marshmallow), There didn't seem to be much on this so I wanted to share the information.
To replace Google Now on a long press on the home button for, say, Cortana you do the following.
Settings > Applications > Default Applications > Device Assistance App > Device Assistance App (should show Google Now, clicking on it lets you choose another compatible assistance application, the list includes Cortana, Bing, Opera, Firefox, or Google App).
