I was given a phone by the company (S6) I used to work to, but I recently changed companies so the new company gave me a new phone (S8) to work in.

Now I was planning on giving away the old phone to family but then noticed several things were locked. One of which was the gmail account where I couldn't remove or even change the account. Another is the pin security of phone where I couldn't disable let alone change it.

Will factory resetting change all of this? I actually haven't tried if I can even go to factory reset since that may have been locked too...

Factory resetting MAY do that, the Gmail account and unlock PIN that you can't change are enforced by policies set by the device management software installed on the phone. However, your previous employer may have used their management tools to lock the phone in "lost/stolen" mode since it was not turned in. The device may be useless to you.

Deleting a Google account usually requires authentication. If the account was actually a Google account and has been removed from Google, that authentication will fail and the account won't be deleted.
