Since I have the One, I'd go with the GPE...And if I had the GPE, I'd get the One...I always want the one I DON'T have.

Google play edition for the stock android. I dislike sense with a passion.

There's some pros and cons with the GPE. The good thing is that you will have less bloatware, no contract, always the latest version of andriod and it will generally run smoother. Cons is that it lacks some features that the regular htc one has with sense 5.0 To be honest I would go with the GPE.
