I've an unrooted TBolt with all the upgrades. I'm still running HTC Sense 2.1. Is that the latest version for us, or should there be a later version supplied with the last upgrade?

That is the latest. It shipped wtih GB. Froyo shipped with 2.0.

Sense 2.1 is the latest official version for the TBolt from HTC. There are ROMs for the TBolt that include Sense 3.0 or Sense 3.5 but you would need to root your phone to load.

Thanks man but Wow...this is a very long process... Is it even worth goin through all the trouble? Ive rooted a samsung fascinate before but i had A youtube video that i followed lol it was so easy...im not even all that great at doing these things ..is there people who you can pay to do it?

it seems like a long process, but it should take no more than about 5 mins. If you use revolutionary that is the easiest.

But, I would try the link from the user that will do it for free, but to be honest, I am the type of guy that likes to learn for myself. Just set aside about an hour or 2 and read. There are tons of Video's that will walk you through it.

That is correct. It's just there for decoration. Once you're comfortable with the new state of things on a rooted phone you'll see that this is a remarkable freedom rather than a lost feature. If you want to run CM7 wipe and flash, if you want stock android, wipe and flash, wanna try out sense 3.5? Wipe and flash. Setting up a batch titanium backup for all user apps+data takes no more than 10 minutes and restoring them takes no longer. From there it's just a matter of laying out apps and widgets to preference. That's the fun of android. Your rules and limits in customization just got pushed further out out of sight.
