I need different notification sounds for SMS and Outlook messages

I’m trying to get different notification sounds for incoming SMS text messages and Outlook mail notifications. What I have been doing is to first go into Android Settings - > Personalize - > Notification Sound and set the sound I want (I’m choosing one of the bundled sounds.) Then, I go into Outlook settings -> Notifications -> New Mail Sound and set the other sound I want for that.

The Outlook setting then changes the Notification Sound I have previously set under Android Settings.

Any advice?

Phone is HTC 10 running stock Android 8.0.0 (Oreo).

Does the Outlook app have a notification sound setting? If so, change it in there. Change the SMS sound in your SMS app.

Go to Settings/Sound & Notification/Advanced/Notifications/Messages, Tap on Incoming SMS/MMS and then under sound, you can change the SMS/MMS notification different from the default notification sound. You can do this again for an app or process that is listed under the advanced list.
