Hi, I think I'd like to take advantage of sprints port credit on Oct 1st but If changed my mind say in a few days is there anyway to GO BACK to AT&T without losing my grandfathered unlimited data plans?

is there a reason for going to sprint? i've seen all 4 carriers and it's VZW > ATT > Sprint/T-Mo which are about even. Sprint and T-Mo have big coverage gaps

The only way you won't loose your unlimited data is to keep your account. What you might be able to do is suspend your account.
that is the answer right there, suspend your account (VZW give you 3 months) then go over and try sprint out and come back if you hate it.
