The list of apps to keep depends on what apps you have and what you're looking to do with the phone. Without knowing that, we can't very well suggest which apps to keep.

You can uninstall any apps you installed. Keep the rest, unless you want to risk having the phone stop working. Many apps depend on processes in other apps, so even if you never used that other app, deleting it causes the app you use to stop functioning.
