What does "factory sim unlocked" mean with regard to what I can do with the phone--I do plan on using the Verizon network. I'm hoping that I can eliminate some of the apps that are normally loaded that I never use.
SIM locking (which AT&T I believe does on all of their phones that they sell you) means that when you take the SIM card out and put in a SIM from any other carrier, the phone will not connect to the carrier and will instead prompt you for an unlock code. Once you enter an unlock code, that means that any other SIM can be placed in the phone.
This is great if you travel internationally, as Verizon has native signal in only the US and will have you roaming at a high cost in most foreign countries (although they do have international plans which are a little less costly.)
All Verizon LTE phones are no SIM unlocked - global phone use is one of their selling points vs. AT&T, though the truth is that AT&T will provide an unlock code if you are an active customer in good standing for a number of months (I believe it is 6 months), though that's a bit of a pain if you travel and forget to unlock before you leave.
The Droid brand phones, while unlocked, are exclusive to Verizon, so they determine the "bloatware" that is installed on them.
Manufacturers now sell phones that are unlocked for all carriers, and, starting just a month or so ago, Verizon has begun allowing you to activate phones that are unlocked on their network. So, in this case, Motorola can sell an unlocked Moto X Pure that has no bloatware, that is not SIM locked, and can be activated on AT&T (in this case, it will be unlocked), T-Mobile, and Verizon, as well as a lot of prepaid carriers. Because these phones are not sold by the carrier, they have only the bloatware that the manufacturer (Motorola) decides to put on them, if any.
Any Droid brand phone that you buy will have the same bloatware on it, whether it's bought from Verizon or Motorola. I believe that I read somewhere that all of the non-Verizon apps on the phone (games, etc.) can be uninstalled (I don't know if that is true, as I don't have a Turbo 2), and, even if they cannot be uninstalled, you can disable them in settings / apps, so you will not see them in the app drawer and they will not receive Play Store update.
