Read in Phandroid some ROM devs just delete the apk from /system/apps. What's it do/for?

I was just being silly. You can remove it if are dying to get rid of it. You'd just lose the ability to read/write/backup onto the sim card. I've heard people have had issues reinstalling the stk.apk after removal, though, for whatever reason.
