Is it possible to upgrade wifi to LTE?

While technically possible, I'd say the amount of work and risk of completely ruining your device outweighs that option.

I thought this was a function of the main chip set, with LTE models using a SnapDragon chip set and WiFi models using a Samsung Exynos chipset?

Pretty sure it would be impossible to swap these, and even if you were able to swap the hardware, the kernel and other software drivers in the operating system are different between the two platforms.

So short answer is no, this is impossible for all practical purposes.
 
While upgrading is not feasible, you can of course buy a USB dongle to connect to a mobile network (Telstra, Optus, whoever). Or you could tether your wifi pro to your smartphone and use your phone's internet connection. Or your phone may be have a setting to turn it into a hotspot your tablet can connect to via its wifi. You would need to watch your data useage of course, or face a nasty phone bill. But you can also buy extra data packs from most telcos to cover a higher useage.
