Is it safe to install lollipop 5.0?

After all of the horror stories, and an already slow-performing phone, I was afraid to install Lollipop 5.0 for my Galaxy S6, and so I never did. I'mean not too tech savy, but I think 5.1.1 is the newest version, and I've heard that all the kinks are worked out of it, however, I'm scared to download 5.0 and then the other updates not come through and be stuck with a phone that doesn't work. Can I skip installing 5.0 and just install 5.1.1?

The OTA updates are usually serialized... so you need to take each one, in order, as you move up the versions. If your S6 is still on Android 5.0, you are most likely well over a year behind and have several updates that you will load.

And version 6.0.1 should be available.

And version 6.0.1

Which has had its own problems, depending on the phone (like no wifi connectivity).
