Do you have a source? From my knowledge the Netflix app doesn't stream full HD (1080p)... Only on the Nexus 7 does it do that.

Correct for phones. Easy way to check is to stream one hour of video, fHD uses around 2gb per hour.

what if the S5 is connected via HDMI adapter to my HDTV? will Netflix stream switch to 1080p streaming that way?

if I play a 1080p MKV video stored on my S5, it will display in 1080p when I connect the phone to the HDTV via HDMI adapter.

No I don't believe Netflix will stream higher because it's still playing on the device then being pushed to the TV. It's more of a Netflix streaming thing versus anything else.

If you play a 1080p MKV file from the phone it will play in that standard. The phone can do it... No worries on that :).

With the size of the S5's screen...the human eye can not pick up the difference between 720p and 1080p. On larger screens such as a tablet it can pick up the difference.

I can certainly tell the difference between my note 2 and Note 3 screens. It is pretty obvious to me. Granted, the note 2 /Note 3 is bigger than s5,but even compared to my moto g and s3, the note 3 is sharper.
