Would any of you even consider the s5 or m8 (or any other competing smartphone this year) if it came with a snapdragon 600? Imo processors are just as important as anything else on the phone. Coming from the m7, the 801 is leaps and bounds better in every single way.

While I agree that the 801 is significantly better than last year's 600 (for me, mainly because of battery life gains), I don't necessarily see the 600 as "outdated". Yes, it's inferior, and if they continued to use the 600 in early 2014 flagships despite Qualcomm having 801/805/810, then I'd think they were just skimping on the processor.
I guess it depends on how much better the processor is and what benefits it introduces. Just like laptop/desktop CPU's (Ivy Bridge to Haswell) they can make a serious impact. Then again you have smaller increments like from Sandy Bridge to Ivy Bridge where it was more like, well yes, it's newer and technically better, but Sandy Bridge is still great.
Given the benefits of 801 over 600, I appreciate that they are using 801's in these early 2014 flagships. No, I wouldn't have gotten an M8 if it had a 600, though I would have gotten a cheaper M7 in that case as I did not use one as my daily driver last year. It's not really because there are faster processors available, but that it isn't really worth getting a newer model if the older one is sufficient (for me, of course).
