Am I correct in assuming the following?

(1) I no longer have to wait for OTA update to arrive and can just update using the official image,
(2) but doing so will wipe off all user data that's currently on the phone?
(3) if I wait for it to update via OTA, nothing will get erased?

Yes. Also you can't flash the image with a locked bootloader, and unlocking it will wipe everything.
