Just received the Galaxy SII Skyrocket, what ROMs do you suggest?

What do you all suggest I install on this baby? I don't care for the latest 4.4 or anything, I just need something nice, stable and bloat-free.
Which ROM/etc do you suggest? I would need it to be multilingual OS.

Cyanogenmod, SlimKat, and Beanstalk run well on the Skyrocket.

I've been running custom ROM Embryo 7.0 with kernel 3.0.7.4 Cymbaline JB RD04 3.8 which is 4.2.1, I love it!

I run SlimROM 4.3 Build 2.2 and it works great on the Skyrocket. Waiting for them to finish up ironing out the bugs in SlimKat 4.4.
