Welcome to the AC Forums.

Install Nova Prime and you can change the screen and the dock icon sizes.

Can you give us an example of exactly what you are talking about with a screenshot? Is it all of the apps or just select ones?

Is Easy Mode enabled, by any chance?

You can also change the grid size on your home screen, which will have a minor impact on icon size.

As noted above, a third party launcher will give you far more detailed customization options.
