I have been thinking about switching to a different launcher. Which one is the best for the S3, and how easy are they to install?

Very easy just download the launcher from the market. I prefer nova but apex is really good as well.

Get Apex or Nova from the market. You don't have to "install" anything manually. If you wanna jump between launchers just go into the application settings and clear defaults on the particular launcher. This applies to Touchwiz as well.
