The only change to the upward slide to unlock deal that I have noticed is when I have a new txt message (then I can slide down to go to Messaging). Is there a way to set this sort of behavior to other apps? K9, Trillian, Facebook... These were some apps I had in mind.

No, not in stock Touchwiz. You could try something like Openhome or aHome and see if those work. I know you can replace your lockscreen with those apps.
