Open Settings, all the way at the bottom of the list Click open About Phone, you should see Android Version and Build Number, the new Android Version is 5.1

Did you watch the update process? I was getting an Error during install, then it rebooted back into old OS on my Nexus 4, this happened 4 times, so I used wugfresh and factory image to update.

If the update is not 5.1. What is new in the update. Should I even bother updating 5.0?

Verizon Samsung Galaxy S5 Lollipop 5.0

There are now over 200 different stock Samsung Lollipop firmwares, plus 2 non Samsung ones, for the Galaxy S5. The latest ones are much better than earlier releases. It depends on your model number and carrier as to which one you re on. See 40 Galaxy S5 models - Dummies Guide
