It's probably all over this forum but when I, my son really, saves everything from my phone will the apps also be saved or just pictures, movies, contacts and the such?

your App List is saved in Google Play Store tied to the Google account and you have the option to have them automatically reinstalled after a factory reset. however, most App data and settings (ie high game scores, etc.) will not be saved.

If your phone doesn't already have it installed download a backup and restore app. Then run the backup. Upon completion you must move the backup file to a place that isn't on the internal storage. A pc would be fine and if you place it on ad card you might remove the card before resetting. After resetting retrieve the file get the same backup and restore app and run it.
