Does the One need a 5 pin to 11 pin converter to connect a mini HDMI adaptor to it? I think it does, I just want to confirm it before I buy anything.

The Note 2 does support mhl, however it requires the converter. HTC One is 5 pin, newer Samsung devices are 11 pin.
And no, that won't work. You need a mhl cable. It'll look like your phone charger on one end and the other side has a small box with a regular HDMI socket and a micro USB socket.
