Looks like you deleted, not moved it. I would reinstall the update zip and reroot.

Actually if you deleted email.apk the update.zip will error out saying it can't find email.apk to update it. You would need to re image your phone or have someone post the email.apk.

SPRecovery is an alternate boot menu with Nandroid so you can flash boot images and such. I was going to say that if you did you could download the virginoem.zip to restore your phone to new with the Email.apk.

Let me see if I can get the Email.apk off of my phone and I will get back to you.

I bought the phone directly from Motorola. THERE IS NO EMAIL APP installed on the phone. I am using Outlook for Android.
Any other solutions?

I upgraded the Android version on my Galaxy smartphone, and had the same problem of missing e-mail icon. After several failed attempts, I went to Apps Tray, pressed Edit at the top right corner of the phone... and then it happened.. the missing e-mail icon got displayed which was probably hidden from view until then!
