So, I was fiddling around today and there was an update that I could install. Went ahead and ran it, and this is what I got:
Okay, okay, I'm kidding (please don't kill me D: ). However for anyone that wants Gingerbread on their phones without it being Gingerbread, I have a present for you:
BuildPropFake.zip
Flash it and reboot your phone; it'll fake your version info to say you're running 2.3.1. Since this is also the build.prop file, it will enable Jit and Stagefright.
The phone is stable with the change, though I don't know what else changing the OS version might do, so use at your own risk. Biggest issue I can think of is apps written with Gingerbread in mind may not work properly, and the Android market may display apps that are Gingerbread only. Though of course if there's a more serious issue, then mods feel free to take this down.

Everything else is available on the forums; ThundeROM has the Gingerbread launcher and keyboard, and Nick7 has released a version of the Gingerbread theme that works with ThundeROM and nRom.
Also note that I have no way of signing zip files, so you may have to turn off verification (or whatever it's called) in recovery to be able to flash this.
