Can anyone explain to me why my iPod touch 5 pictures appear to be so much better than pictures I take on my Moto G, they are both 5MP cameras? If it's software can anyone point me towards a good camera app that gets the best quality pictures please

The iSight camera and the camera on the G are totally different in terms of the software that's used. No app will help you achieve the picture quality you get from the iPod Touch 5 camera.

@Stephen is correct. Both use different software processing and likely different camera sensor modules (despite both being '5 megapixels') which will explain the difference in perceived Brightness and image quality.

Always enjoyed the camera quality on my iPod Touch compared to my Android devices.
