My AT&T S2 just got an Update

5.1.1 is the Lollipop security update that Google pushed out a while back (this past fall). Samsung pushed out the OTA for WiFi variants and the carriers are pushing out the OTA for their respective LTE versions. The 5.1.1 update was released in Aug/Sep 2015 though. AT&T took a heck of a long time getting your device updated.

I believe Marshmallow with security patch is 6.0.1.
 
That'll depend on AT&T and not Samsung.

For non pure Android devices like the Tab S2, Google provides the OS and or OS updates to Samsung. Samsung then has to create builds for each variant it produces, test them, then for the LTE variants, submit to the respective carriers for testing, approval, and OTA. For WiFi only models, Samsung handles the testing, approval, and OTA. Once it passes Samsung's testing, it is rolled out incrementally, usually by region and model.

The WiFi variants are getting updated via OTA by Samsung as we speak. Germany and the UK are getting it now. The US will probably get in in the next few weeks for WiFi. The LTE models are updated by the carriers and not by Samsung.
