My Gallery won't open since the system update.

Try a Cache Partition wipe, if possible on whatever device you have.

Welcome to Android Central! What device? Do you get an error message? Try going to Settings>Apps, select Gallery, and Clear Cache/Clear Data, then Force Stop. Try opening it again.
