My punctuation and capital lettters no longer show when typing in apps.

I don't know if there was an update but now things don't type the same. A new sentence in facebook does not start with a capital letter nor does the word "I". I wonder if I changed a setting that threw everything off.

Not sure about your specific phone, but go to Settings -> Language & Input -> Google Keyboard (or other) -> and look for "Auto Capitalization" or some such.

You must have turned it off.

Actually, I had turned off the Samsung keyboard and had Google voice typing checked. Weird. I turned in Samsung on Tab 3 and now I get capital letters when starting a new sentence. Still don't get auto apostrophes on contractions (can't) or pronouns (He's) but it's way better than before. Thanks for your help.
