My S9+ restarts itself while I'm using it.

Once or twice per day? That isn't good. It may be an app or something in the OS crashing. IDK the best way to fix it except for a factory reset (or at least that is what I would do since that takes the least time versus troubleshooting each app / thing).

Take it to your carrier. May be hardware.

They'll just tell me it's a bad app and to reset, and reinstall everything one by one, till I find the culprit.

Yup. That's what I would recommend when the restarts become intolerable. Also don't install any apps. If you still are getting restarts then get a warranty replacement.
