What exactly does "Nandroid" mean? Every guide to rooting and/or installing a rom tells us to do a "nandroid backup", but I don't know what this means. I've tried searching, but I just get more hits of guides and rom threads saying "do a nandroid backup" so I still don't know what it means.

What's the difference between going to 'backup and restore' --> 'backup' in Recovery, and doing a nandroid backup?

EDIT: I'm planning on using ROMtools and getting Harmonia if that's relevant.

It is a complete 1:1 backup of everything on your phone.

a nandroid is an exact copy of all the partitions and data on the phone at the time it was made. when it gets restored your phone works exactly as it did when you made that backup, including personal settings, apps, and accounts that are logged in.

and yes, in recovery, if you select "backup and restore" those are the options to creating a nandroid
