Hello. I'm trying to migrate my mom's old Fire tablet over to m Amazon Prime account; it's essentially wiped out everything, and I tear what little hair I have over the interface!
She's 78, going to be 79 in a few months, and she wants to send some email. Play some games to.
Mom's also visually impaired, so the larger the screen, the better! So, any suggestions or links for me to review would be greatly appreciated! Thank you!

Pixel C is the best Android tablet available. The Nexus 9 is pretty good, but the Pixel C is much better. If you're looking for a little cheaper the NVIDIA Shield K1 is the only other Android tablet worth buying. Honestly, I'd recommend last generation's iPad Air but if it has to be Android, never buy anything that isn't the Pixel C, Nexus 9 or Shield K1.

Get her a galaxy tab, I recommend this because it has the Easy Mode feature.

+1 for this suggestion, that TouchWiz Easy Mode is annoying for some more savvy users but for the elderly, younger kids, and visually-impaired it's a pretty nice way to be able to interact with a mobile device.
