Besides the chop chop action flashlight and the hardware bumps, what else is new with the phone? (In terms of features)

Actually, the flashlight feature came to the 2014 X with the 5.1.1 update, so that's not really "new" to the 2015 X (Pure Edition).
 
Not really sure what the new features will be until the phone gets advertised more. I did see where moto actions and display has got a few new tricks.

I kind of wish they made the back removable like the moto g so you can swap covers if you want. You still cant get to the battery, but you can change backs and buy extras

While not practical from a design perspective (if you want this to feel premium and not just with a cap slapped onto the back like the G), I agree it would be awesome to be able to do this simply because it's so difficult to lock down just one choice. My 2014 X has the bamboo back on it and I get compliments on it all the time. Most people think it's a case and are even more impressed when they realize it's the actual back (my X runs naked nearly 100% of the time).

I was really hoping with the move to phablet size Motorola would have created some sort of Moto Action to enable a one handed use mode that shrinks the entire screen for easier reaching. Oh well, maybe they can still add it in an update if enough people complain about the size.
 
One thing I'd really like is if they got rid of the cartoonish images on Motomaker and put photo-realistic images on it so we could more accurately see how the colors look. I have not been a fan of the their version since the OG X.
 
I didn't read or hear that anywhere, at least in the US ... do u have a source saying it'll have M?

It won't at launch. It'll be updated after. Official specifications list 5.1.1 for the initial release.
