New to android rooting, one major question about OTA updates

To today I rooted my Moto X using the RockMyMoto method and I know that unrooting is possible. From what I've read as long as one does not make any changes to the underlying system files you can still download and install updates as they are pushed to your phone. Is this correct? Also if this is true then what apps should I avoid at all costs?

Welcome to the forums.
If anything you can delete the app that grants root access, and you can accept the OTA update.
As for avoiding apps, I do not understand what you mean.
