Nexus 6 -Launchers

Just out of curiosity, if the nexus 6 is rooted, if you download a third party launcher, can you delete the stock Google launcher?

Use whatever launcher you like, but I would highly recommend you leave the default launcher on ANY phone alone. Let's say you do a factory reset.... your phone does the whole firstboot thing and initializes... what is it going to run when it attempts to get to your homescreen? Yep.... you got no launcher and you put yourself in a bit of a pickle since you may or may not be able to get to Google Play to download a new one. If you CAN'T get Play launched, your only recourse is to flash something that has one in a custom recovery or, if you don't have a custom recovery, you'll pretty much need to load a factory image.

Using Wugfresh's Nexus Root Kit you can make easily make a backup of your phone and then break whatever you like. As long as you can get into the bootloader you can easily reflash a working ROM, even Android M previews. It's really easy and simple. So you could get rid of the Google launcher and if things go really south you could just restore your backup and bam, your phone is happy again. That said, I'm not sure what the possible benefit would be to deleting the Google launcher. I don't think it takes up much space on your phone.
