I installed Go Keyboard from Market place. Now you'll have that as an option under Language & Keyboard. You can choose to use Go Keyboard as your default keyboard or check it each time you need to type with it. I use the "handwritting" method 'cos I'm not familiar with other methods like pinyin. The Go Keyboard would let you toggle between English and Chinese.
