I haven't upgraded my phone for quite sometime and wondered if I did the upgrade now would it upgrade without issues since it is so far behind?

There shouldn't be any problem to upgrade now. The process will be done one step at a time, so it will take some time. The only thing you should be aware, is the fact that after upgrading there is a small chance you'll loose connectivity with you car's Android Auto. I have a Tab S6 on Android 11 and it doesn't connect to my car's display through AA.

There's typically no problem with catching up on upgrades. Most likely, though, you'll have to install several updates sequentially, since it's typically not a cumulative update.
