I know I can change which controls are in the notification bar by changing the widget.txt file in system>customize, but I don't know what other things these can be changed to or how to spell them correctly (for example, if "toggleGPS" was written as "togglegps" it wouldn't work). Is there a way to find a list of the different toggles? And can I add widgets, such as the one that shows 3g/4g signal strength?

Not really many options... see link in quote below. The list is something like this.

toggleWifiAp
toggleWimax
toggleAirplane
toggleAutoRotate
toggleBluetooth
toggleBrightness
toggleFlashlight
toggleGPS
toggleLockScreen
toggleMobileData
toggleScreenTimeout
toggleSleepMode
toggleSound
toggleSync
toggleWifi

Two methods, either create the widget.txt on you computer and adb push widget.txt /system/customize/. You'll need to mount your phone as r/w first which can be done in the das BAMF toolkit under System Settings. Second option is to use something like root explorer or super manager to edit the file on the phone itself.
