ZTE 1st company outside google giving us this update

Are you using a launcher like Nova Launcher? If so, uninstall it and the update should take.

I have the ZTE Axon 7 (64 gb) with Nova Launcher, and my update went fine. After the reboot, the default launcher was switched to Stock Android, but I just reselected Nova Launcher as the default launcher and it was fine.

Are you using a launcher like Nova Launcher? If so, uninstall it and the update should take.

I never installed a launcher

After it turns off and back on it comes up to a menu.
Android recovery
Reboot to Bootloader
Apply update from ADB
Apply update from SD card
Wipe data/factory reset
Wipe cache partition
View recovery logs
Run Graphics test
Power off.

You can try wiping the cache partition. If the update, still won't take, you may have to do a data reset.

I use Nova Launcher and I didn't need to uninstall it in order for the update to work.

I also have nova launcher installed I did nothing... My update went fine... No issues...

Still won't update. It's downloading but it doesn't know where it is and neither do I. This is frustrating.

Did the update ever finish downloading? What happens when you check for an update?

Yes it does finish and has a short countdown before it forces a restart. Then it gets to that menu I mentioned before. I tried doing the Apply update from ADB but it asks for the path and filename.

Is your phone rooted or completely stock?
