Do you think we'll be able to change the command for touchless control on the Droid Maxx like you can on both of the Moto X's and the Droid Turbo?

I don't think so. I tried saying a different phrase on my Moto X and it didn't work.
 
I use 'Droid Maxx'. You can experiment all you want, so long as it somewhat resembles the sound and rhythm of the intended factory phrase.
 
I use "OK Google Now" still (though I rarely use it myself.) Motorola said earlier this year that older phones that upgrade to Lollipop will support the new features of the Moto App on the 2014 Moto X and Droid Turbo except where the hardware doesn't permit it - and the example they gave for that was waving in front of the phone to dismiss phone calls, since the 2013 Moto X and Droid Maxx series don't have the infrared sensors on the front that the 2014 Moto X and Droid Turbo have.

So, yes, I think you will be able to tailor the phrase when the phone gets lollipop. The big question for me now is will the phone get lollipop before I upgrade to something else later this year? I would have laughed at that supposition last November. I'm not so confident it will come this summer now at all.
