I've got quite a collection of Aukey and Anker USB chargers, most multi-port, from my previous phones. Most are NOT Quick-charge. Would these be safe to use with my new Pixel 2 if I use good/safe USB-C cables?

I realize they will charge slower than a PD charger.

They should if they you stick to brand-name chargers and microUSB-to-USB-C adapters. Like you say, it will charge, just not with Fast Charging (I suggest no less than 2A chargers, though, as those will either take too long to charge or might even be recognized by the phone as 'slow charging')

Safe with the right cable.

They might actually be safer for longterm battery health than always quick charging, provided they are quality chargers and cables, as was mentioned. I only quick charge when I have to.

If I charge overnight, I definitely use a "slower" charger.

I'm using the stock charger from my v20 to slowly charge overnight, and i bought a moto turbo charger off eBay for $10 to have a backup rapid charger.
