I have a Samsung Galaxy S8+ running Oreo. This is my first Samsung device, so I'm just getting used to everything. I love the option to create folders within the app drawer, but am wondering if there is a way to have more than one shortcut per app?

For example, if I have one folder (in my app drawer not on my home screen) for Google and one for Teaching, I would love to be able to include Google classroom in each folder.

You can just go into any folder that you've set up, hit "add apps", and then add the app you want. It doesn't dissappear from the choices once it's added to a folder.

Heh. I didn't play around long enough. Figured it out. In case you're a giant n00b like me:

Also annoying? Not being able to copy a folder from home screen to app drawer...
So to clarify: can't have one app in more than one folder in app drawer and can't copy a folder from home to app drawer. Boooo!

But it does disappear from one folder once you add it to another folder. :-(

You might try a third party launcher such as Nova. It allows you to put an app in multiple folders.
